White balsamic vinegar
I really like the fact that balsamic vinegar comes in white. Balsamic vinegars in general have such a nice and classic characteristic to their flavour, for many people say "oil and vinegar" and a dish with a green pool of olive oil with a black spot of balsamic vinegar immediately comes to mind. It's a simple and wonderful thing, but sometimes with some delicate and pretty spring greens, it's a shame to stain them with black. With a white balsamic around, you can have that same flavour combination, but let the natural colours of the greens shine through. We eat a lot of salad at our house, but seldom buy salad dressings at the store, rather we like having a tasty olive oil around and an arsenal of vinegars and freestyle it depending on what lands in the salad bowl. Of course we always have a nice black balsamic, we just make sure we have a white as well to keep things interesting.
