Recipe: Pear vinaigrette

This salad dressing is a nice touch to your favorite mix of spring greens.  Its fruitiness hints at the summer bounty to come, yet remains mellow enough to play to the chilly days marking the end of winter.  Depending on your mood, add some winter spiced poached pear to top off the salad - even use them as the pear portion in the dressing if winter still has a firm grip in your area.

You will need:

    1                 pear
    1                 small shallot
1C / 250ml     olive oil
1/2C / 125ml  cider vinegar (pear vinegar if you can find it)
1Tbs / 15ml    honey
to taste            kosher salt

Method:

 - peel, core and chop the pear
 - chop the shallot
 - saute the two together in a bit of the olive oil
 - add the honey and let it take on a bit of colour - more if it's cold outside
 - remove from the heat and deglaze with the vinegar
 - transfer to a blender and puree well, then stream in the rest of the olive oil while blending
 - season with salt
 - let cool, then store in the fridge until use
